Healthy Pizza

Yes, you read it right. Becoming healthy has a major flaw. My love for pizza. My Lean in 15 book came to the rescue though with a great idea for a healthy alternative. The base is substituted with a tortilla wrap, and it actually works! 
Here is my version - 


Ingredients:
1 Tortilla Wrap
Half a tin of chopped tomatoes
Oregano 
Spinach
Chicken
Mozzarella
Mushrooms
1 Egg

You will also need:
Oven heated to 200°C
Baking tray (oiled so the base doesn't stick)
Colander

Mix half the tin of chopped tomatoes with a few sprinkles of oregano. When adding toppings, leave a gap in the middle ready for the egg later on. Add the mozzarella and mushrooms. Put 4 big handfuls of spinach into a colander and pour boiling water over to wilt. Then pour cold water to cool down and squeeze out the excess water using your hands. Place the spinach on your pizza equally. 

First Stage

Break the egg into the gap
Crack an egg into the gap you left. Pop into the oven for about 12-15 minutes. It is ready when the egg white has turned fully white. Serve up like a normal pizza. Next time I will switch the mozzarella to a small amount of grated cheddar as the mozzarella made it a little bit soggy whilst cooking.  Below was the best picture I could get as I forgot to oil the baking tray and it all fell apart... whoops!
